Each evening, meals are paired with fine regional wines - from classic Chianti DOCG selections to vibrant whites and emerging varietals from lesser-known estates. On select evenings, guided tastings explore the zones and sub-zones of the area, introducing both structure and surprise to the glass.

From Garden to Table
Tuscan cuisine is widely recognised as one of the world’s finest - not for complexity, but for the purity of its flavours. At Pieve a Castello, our chef draws inspiration from tradition and our land: vegetables from the organic gardens, wild herbs, fish from local spring-fed pools, and ingredients sourced from within a day’s walk (25km).
Seasonal menus often feature wild boar, prized porcini mushrooms, and pecorino cheese from nearby farms - all prepared with care, and with the lightness of hand that great food allows.

The majority of ingredients are grown or foraged on-site or nearby. Even meals served on the terrace or in the candlelit baptistry feel grounded - in season, in community, in intention.
